The dessert kkwabaegi is a kind of fried brioche, a twisted doughnut with the special touch of wrapping it up in matcha tea mixed with sugar.
Ingredients:
- 385 g flour
- 40g butter
- 7 g baking powder
- 75 g sugar
- 250 ml milk
- 1 egg
- 1 tsp salt
- Frying oil
Mix butter, yeast and milk heated to 30 ° C. Mix all the powder (flour/sugar/salt). and pour the powder into a mixer. Add the mixture of milk and mix at medium speed until it becomes a smooth paste. Add the egg and beat for 5 minutes. Place in a dish and cover with a sheet or lid for 1 hour.
The dough should double its volume. Degas by reworking the dough by hand. Divide it into small balls of 50g. Make a form of Kkwabaegi (See the video). Place them on top of the baking sheet on a plate and cover them with another sheet. Let them rest under a sheet at room temperature for one hour.
Heat the oil to 160 ° C and fry the Kkwabaegi 2 by 2 until they turn into a blonde color. Put the sugar and half a teaspoon of matcha tea in a bag. Put the Kkabaeghi in the same bag, close and shake.
