Designed to showcase the pinnacle of gastronomic excellence, this annual list unveils the most extraordinary dining destinations across the globe. With the combined expertise of 1,080 culinary experts, the team adheres to a rigorous voting process to determine the world’s finest restaurants. This prestigious compilation not only provides a captivating snapshot of the ultimate culinary experiences but also serves as a barometer for global gastronomic trends.
From avant-garde establishments pushing the boundaries of creativity to traditional eateries that celebrate heritage and authenticity, the list encapsulates a diverse range of dining experiences. Whether it’s an opulent Michelin-starred establishment or a hidden gem tucked away in a bustling street, these exceptional restaurants captivate diners with their artistry, passion, and devotion to gastronomy.
Announced on June 20th, at an awards ceremony in Valencia, Spain, at the city’s Les Arts Opera House, the 2023 list includes restaurants from 24 territories in five continents worldwide and introduces 12 restaurants making their debut.
Central, the flagship restaurant in Lima, helmed by chefs Virgilio Martinez and Pía León, has claimed the top spot. Ranked at No. 2 in 2022, Central pays homage to Peru through a menu that exalts the country’s remarkable biodiversity and showcases its indigenous ingredients. Guided by Mater Iniciativa, its research arm, the restaurant embraces Peru’s rich traditions and history, while championing sustainability.
Virgilio Martinez, Pía León and the whole Central team have truly paved the way in celebrating indigenous ingredients through their innovative dishes and warm hospitality.

South America continues to solidify its position in global gastronomy, with a total of nine restaurants from the continent making the list. Notably, two new entries have emerged: Pía León’s Kjolle in Lima, at No. 28, and El Chato in Bogotá, at No. 33. Asia follows closely, with seven restaurants, including Singapore’s Odette, crowned The Best Restaurant in Asia, at No. 14. The list also introduces new entries like Le Du and Gaggan Anand in Bangkok, at No. 15 and No. 17, respectively. Dubai makes its debut with two restaurants, Trèsind Studio, at No. 11, named The Best Restaurant in the Middle East & Africa, and Orfali Bros Bistro, at No. 46.
